Pak Choi with Brown Vegan Butter

Serves 4-6

  • 400g bok choi
  • 40g vegan butter
  • 1 1/2 tbs Soy Sauce or Coco Aminos
  • 1 red chilli, finely chopped
  • 2 tbs roasted sesame seeds
  • 2cm of Ginger
  • Coriander to garnish

  1. Split the bok choi lengthways
  2. Brown the butter in a saucepan until it smells nutty and is light brown in colour. Pour in the soy sauce and the chilli, and then pour the butter into a bowl to stop the browning process
  3. Fry the cut edge of the pak choi in oil for approx 2 minutes until has taken on color and softened. Consider covering with a lid so that the pak choi is steamed.
  4. Place onto a plate. Pour over the butter, top with roasted sesame seeds and use scissors to snip the coriander over it. Serve immediately
